One of the components of sustainable consumption is the consumption of organic products. Organic foods, which are natural and healthy, are increasingly competing with conventional quality products. It is therefore important to substantiate the opinion formed about the higher quality value of organic food. 2020 At the LAMMC Institute of Horticulture, red beets were grown using two different farming systems: organic and conventional. Beets grown in different agricultural systems, of the same varieties, allow to more accurately identify the qualitative differences between the raw materials of sustainable farming and conventional. Tests performed electrochemical: pH; redox potential rH; specific electrical conductivity; energy value of the product P and chemical: iron, glucose and anthocyanin. These indicators of holistic research are the main indicators of the energy value of the product, which influences the assessment of the suitability of the product for the human body. Crystallograms were also performed using the biocrystallization method. The principles of structure formation during biocrystallization allow to expand and supplement the usual methods of quality analysis, limited to the determination of the quantitative composition of materials, by the study of the self-functionality of a living system. Based on the obtained results, it was analyzed whether the red beets produced by the organic farming system have a higher energy value and have a higher quality value than the conventional farming systems.
