This investigation evaluates the biocatalytic efficacy of oxidases, more specifically lipoxygenase, on the physicochemical and rheological dynamics of wheat flour matrices. A systematic review of current literature highlights the multifaceted functional advantages of lipoxygenase incorporation across diverse wheat cultivars.
