The article deals with the stages of obtaining collagen hydrolyzate by means of biomodification of cattle rumen, as well as the method of its canning by freeze drying. The preparation of cattle rumen hydrolyzate (RHF) was carried out as follows: the scar was pre-rinsed in running tap water for 20 minutes to remove contaminants and mucus, scraping off muscle and adipose tissue; after the run-off of water (15?20 min), the raw material was ground on a top with a diameter of holes of the scoring grid of 2?3 mm.
