ANTIOXIDANT CAPACITY AND MINERAL CONTENT OF SOME TOMATOES CULTIVARS GROWN IN OLTENIA (ROMANIA)

This study presents functional and nutritional properties of the tomatoes (Solanum lycopersicum L), an ideal source for health promoting compounds. In this paper eleven cultivars of tomatoes were studied that were grown in greenhouses in Oltenia (Romania), which were differentiated between them by shape, size and colour of the fruit. For biochemical determinations, fruit samples were collected at physiological maturity. It was determined the content in soluble dry matter, total dry matter, vitamin C, content in macroelements (K, Ca, Na and Mg) and trace elements (Fe, Cu, Mn, Cr, Zn and B). The values recorded for soluble dry matter, total solids and vitamin C highlight the Cherry Belle cultivar which had SDM = 8.87%; TDM = 10.30% and vitamin C = 16.11 mg/ 100g and Tiger cultivar with SDM = 9.87%; TDM = 9.24% and vitamin C = 17.81 mg/100g. The mineral elements content varied significantly depending on the cultivar of tomato. The values recorded for Ca and Na highlight the Antalya cultivar and for Fe, Mn, Cu, Zn there was evidenced the Lille cultivar. The tomato fruits according to the obtained results proved to be a good source of calcium, potassium, magnesium, sodium, iron, copper, manganese, chromium, zinc and boron. This species has a significant potential of bioactive compounds for a functional alimentation. The recorded values demonstrate that the varieties can be differentiated depending on the nutritional qualities.
