Anthocyanins are known as safe colouring materials, although they have poor stability which often limits their use. To solve this drawback, mesoporous silica with high surface area was used as an adsorbent for anthocyanins. This study proposes the enhancement of the anthocyanins photo stability by their incorporation into the pores of mesoporous silica containing various metal ions. The anthocyanins were adsorbed on the silica by pouring a highly-concentrated anthocyanins solution to the dried silica. Improved stability of the anthocyanins against visible irradiation was achieved by the adsorption onto the silica containing Fe3+, although other metal ions in the silica showed less effect on the stabilization (Mg2+, Ni2+). The UV?Vis spectroscopy found that the Fe3+ was tetrahedral. The decrease in the absorptivity of the anthocyanins on the Fesilica compared to other metal-containing silica suggested that the Fe-silica promoted the aggregate formation of the anthocyanins molecules, the Fe3+ species having the ability to gather the anthocyanin molecules close to itself. The results of the incorporation and aggregate formation revealed the contribution of silica materials to the improvement of the stability against irradiation.
