An increasing proportion of waste in megapolicies belongs to food waste, including waste of food industries and catering. Currently, this type of waste is practically not processed in Russia and disposed in landfills. However, technologies for food waste processing are known and include composting, accelerated anaerobic digestion, biogas production, etc. This paper discusses the innovative technology of food waste use in the form of a substrate for growing black soldier flies (Hermetia illucens) to produce melanin, which is used in the manufacture of therapeutic and prophylactic drugs and dietary supplements for animal feed. The use of dead imagos and the empty shells of black soldier flies? pupae (Hermetia illucens) was considered promising for expanding the raw material base for melanin production because of their easy feeding with nutrient substrate, high reproduction rate, and relative ease of organization of growing conditions. The article presents the methodology and results of experimental studies on the extraction of melanin from the chitin-melanin complex (CMC), obtained as a result of a multi-stage biomass extraction. The subject of the study was black soldier fly (Hermetia illucens) at the following stages of the life cycle: the imago grown under controlled conditions and died from natural death and empty shells of pupae remaining after their departure. Considering that the useful product yield may vary during rearing on different substrates, for analyzing the economic efficiency of technology it is necessary to determine the desired concentrations of the useful product using each type of substrate.
