ASSESSMENT OF EGG WEIGHT, COMPONENTS, AND METAL CONTENT IN DIFFERENT HEN HOUSING SYSTEMS

Abstract

The egg is an animal-derived food with remarkable nutritional value, providing a balanced intake of essential nutrients and high digestibility, making it suitable for all age groups. This study aims to analyze the impact of different hen-rearing systems on egg characteristics, including their mass, the proportion of components (egg white, yolk, shell), and the content of minerals and metals. To determine the quantity of metals in the various egg components (shell, egg white, yolk), the X-ray fluorescence (XRF) method was used. The study compared eggs from two rearing systems: enriched cages and an organic system. The results showed that the rearing system does not significantly affect egg weight or the proportion of its components. However, the content of essential elements such as iron (Fe), zinc (Zn), selenium (Se), copper (Cu), manganese (Mn), and nickel (Ni) was higher in eggs from enriched cages. Regarding the distribution of minerals, higher concentrations of potassium (K), calcium (Ca), zinc (Zn), and copper (Cu) were found in the yolk compared to the egg white. The analysis of toxic heavy metals revealed the presence of cadmium (Cd) and mercury (Hg) only in the shell, while mercury was detected in low concentrations in the internal egg components
