Abstract

Chenopodium album L., is a plant from the Amaranthaceae family. In many traditional cuisines, the leafy plant is highly valued for the nutritional properties, especially the leaves. Being native to Europe and Central Asia, the plant has been used and cultivated for its nutritional and medicinal properties. Containing several bioactive compounds, makes Chenopodium album very beneficial to human health, including: betalains пїЅ pigments with antioxidant and anti-inflammatory properties; polyphenols пїЅ antioxidants that combat oxidative stress and protect cells; vitamin C пїЅ a powerful antioxidant that supports the immune system; carotenoids пїЅ beneficial for eye health and antioxidant protection; essential fatty acids пїЅ such as linoleic acid, which is beneficial for cardiovascular health. These compounds give wild orache valuable health benefits. Some studies have marked the fact that the plant, Chenopodium album, presents ecological benefits on the high salinity in the soil, supporting biodiversity in rough environment and the potential of heavy metal tolerance in the industrial areas. Nutritional elements like minerals, are necessary for a proper functioning of the human body. The rich various essential minerals in Chenopodium album makes it an important part of a balanced diet. The plant contains minerals such as: calcium, potassium, magnesium, iron, zinc, copper, manganese and selenium. The aim of the study is to exploit de nutritional and environmental potential of Chenopodium album and the benefits for human consumption as novel food, as well as environment safety.
