ANTIOXIDANT ACTIVITY DETERMINATION OF HORTICULTURAL CROPS
Abstract
This work is focused on antioxidant activity of various types of horticultural crops. Several types of vegetable and fruits were analyzed by free radicals scavenging method using 1,1-diphenyl-2-picrylhydrazyl (DPPH). In this work various methods of analysis results expressing were evaluated. The results were expressed, in terms of the widest applicability, while the simplicity of the serial analysis were maintained. Percentage of inhibition of free radicals was expressed per unit sample weight and standard pipetting volume of the extract. This preserved the simplicity and speed of the used method. At the same time, the wider applicability of the method for the most diverse horticultural crops with different coloring and antioxidant activity was achieved. The interference of the extract colorants was eliminated by reaction mixture preparing, directly in the cuvette of the spectrophotometer. The method was statistically evaluated by important validation parameters calculating. The repeatability and the relative combined standard uncertainty were calculated. The results showed that, the repeatability of the method is 8.4% and the relative combined standard uncertainty is 11.0 %.
