HONEY AS A SOURCE OF ESSENTIAL MICROELEMENTS

Abstract

This study aims to determine the total concentrations of certain essential microelements: Fe, Mn, Zn and Cu from three types of honey: lime (Tilia europea), acacia (Robinia pseudoacacia) and polyflower honey, taken from domestic producers in unpolluted hill areas of the county of Caras-Severin (Romania). The total concentrations of microelements, determined by flame atomic absorption spectroscopy (FAAS) - after calcination and ash extraction with nitric acid, shows that the analyzed honey types contain important quantities of essential microelements: 9.59 ? 14.48 mg/kg Fe, 0.98 - 2.55 mg/kg Mn, 3.11 - 4.59 mg/kg Zn and 0.43 ? 0.64 mg/kg. The mineral intake, calculated from the average concentrations of the microelements in the analyzed honey samples and the recommended daily requirement, shows that a consumption of 100 g of honey contributes differently to the provision of recommended daily needs, depending on the microelement, the honey type and the consumer category. Particularly, in this experiment the mineral intake in the daily diet for the analyzed microelements shows the next ascending trend: Zn ? Cu ? Mn ? Fe - for men and Zn ? Cu ? Fe ? Mn ? women respectively.
