ISOCHORIC-ISOBARIC PRESERVATION IN WATER

Abstract

Preservation at positive temperatures is limited in time. The common technique to reduce metabolism is by reducing the temperature below ambient, using refrigeration or cryogenics. Therefore, these methods are used to preserve biological matter (cells, tissues, organs, vegetables, fruits etc.). Preservation at negative temperatures is possible with limitations in time and imposes also other biotechnological challenges. Long term preservation below freezing temperatures is not successful yet for organs and tissues. The water, in liquid state is the main constituent of most living organisms and is also vital for all forms of life on Earth. Water is adequate for life at normal temperature and pressure (293.15K and 1 atm). For preservation purposes water is mostly used in solid state, as ice I. We try to explore a new concept for negative temperatures preservation of biological matter, by cooling but without freezing ? isochoric preservation. Isochoric preservation requires a constant volume, rather than the constant pressure. The phase diagram of water shows that in isochoric conditions, ice and pure liquid water can remain in thermodynamic equilibrium to temperatures as low as ? 21.985 ?C and a pressure of 209.9 MPa. This paper will introduce the thermodynamic principles of isochoric preservation in pure water.
