FINGERPRINTING FRUITS BASED ON BIOACTIVE COMPOUNDS AND HEAVY METALS CONCENTRATION

Abstract

The bioactive compounds in apples and pears might confer many health protective benefits by improving oxidative stress, on the other hand in case of higher than the admitted values, Heavy metals could affect health. Apple and pears are members of the Rosaceae (Rose) family, known for their pomaceous fruits. The aim of this study was to describe the quality traits, the level of antioxidant activity and polyphenol content of some apples and pears available on the Romanian market as well as the heavy metals concentrations of the mentioned fruits. The total antioxidant activity (TAC) was determined using FRAP method and total poly-phenols content (TPC) by Folin Ciocalteu method. Analysis of heavy metals was made using high-resolution continuum source spectrometer ContrAA-300, Analytik- Jena device, by flame atomic absorption spectrometry (FASS). Combining the information given by analyzed data with chemometric tools for class modeling, we obtain a unique fingerprint which can be used for verifying the declared origin of fruits as well as some quality indicators. The obtained fingerprint may be useful to better understand the nutraceutical traits of this fruits species as well as the importance of fruits fingerprint collection for improving food security.
