Abstract

The aim of study was development of method of processing native starch by low-temperature biocatalysis without preliminary gelatinization, provides the production of new types of starch products. Was made studies of glucoamylase effect on native starch in water environment with temperature lower than sub-gelatinization temperature point. The objects of the research were samples of various types of starch (wheat, potato, maize native, amylopectin) and products of biocatalysis: modified starch and liquid fraction of starch solids, which passed into a soluble state under the action of the enzyme. Was determined the degree of dissolution and hydrolyses of starch, values of physyco-chemical and functional properties of reaction products with usage Bischoff 8120 chromatograph, Speks SSP-315 spectrophotometer, Tescan Mira LVU scanning electron microscope, Bruker D8 Discover A25 DaVinci Design diffractometer, RVA-TecMaster Rotational Visco-Analyzer. Were founded optimal parameters of process of low temperature biocatalyses of maize starch, which provides obtaining of glucose syrups with high clearance: DE 98-99% and modify pours starch with higher temperature of beginning gelatinization, higher water binding and adsorption capacity, lower viscosity of starch paste gel, compared with the initial starch.
