APPLICATION OF SOYBEAN OIL OLEOGEL STRUCTURED WITH BEES WAX AS A FAT SUBSTITUTE IN GLUTEN-FREE MUFFINS BASED ON MILLET FLOUR

(STEF92 Technology, 2025-12-27, Sorina Ropciuc, Viorica Bulgaru, Florina Dranca, Daniela Oana Pauliuc, Olga Smerea)

This study describes the use of a soybean oil oleogel structured with beeswax (4-6% w/w) as a fat replacer in gluten-free millet flour-based muffins. The oleogel was incorporated into the muffin formulation by replacing 100% of the conventional fat. The dough rheology was analyzed to evaluate changes in viscoelastic behavior, and the muffins were evaluated for their sensory and textural profile. The results indicated that the oleogel maintained the desired dough rheology and produced muffins with acceptable textur...

WATER RESOURCE EFFICIENCY AND QUALITY MONITORING: A CASE STUDY OF SUCEAVA COUNTY'S DRINKING WATER SYSTEM

(STEF92 Technology, 2024-12-15, Anca-Mihaela Gâtlan, Amelia Buculei, Mircea-Adrian Oroian, Sorina Ropciuc, Vasile-Florin Ursachi)

Resource efficiency is an important aspect in the efforts to support and evolve economic development, while maintaining all natural systems unaffected. However, resource efficiency cannot guarantee the perpetual use of existing water resources. Water resource efficiency policy must be based on an awareness of the number of resources that can be used, but also the impact of activities on the environment and how it is affected. Developing and increasing the number of consumers. Options for water sources used for dri...

EVALUATION OF THE CHARACTERISTICS OF OLEOGELS BASED ON CARNAUBA WAX AND THE ROLE OF THEIR ADDITION IN THE WHEAT DOUGH

(STEF92 Technology, 2023-12-15, Georgiana Gabriela Codină, Sorina Ropciuc, Mircea Oroian, Florina Dranca, Ana Leahu)

Different oleogels were obtained from olive oil (OL), grape seed oil (GO), sunflower oil (SO), walnut oil (WO) and hemp oil (HO) using carnauba wax as a gelling at different concentrations of 5%, 7%, and 9% (w/w). The physical characteristics of the oleogels obtained, such as oil binding capacity (OBC), peroxide index (IP) and color, were determined. From a structural point of view, the oleogels were further investigated by Fourier transform infrared spectroscopy (FT-IR). It was found that a higher concentration o...

FORMULATION OF OLEOGELS BASED ON CANDELILLA WAX: PHYSICOCHEMICAL AND RHEOLOGICAL CHARACTERIZATION

(STEF92 Technology, 2023-12-15, Sorina Ropciuc, Georgiana Gabriela Codină, Mircea Oroian, Florina Dranca, Ana Leahu, Ancuța Elena Prisacaru)

The aim of the study was to characterize the gelling effect of candelilla wax (DW) using different types of cold-pressed vegetable oil (sunflower oil, olive oil, walnut oil, grape seed oil and hemp seed oil). The structuring of the oleogels was achieved by hot incorporation of oil with different percentages of carnauba wax, as follows: 3%, 5% and 11%. Characterization of the oleogels was done by determining the chemical and physical properties of the oleogels, the oil binding capacity and the texture of the oleoge...

EFFECT OF POTASSIUM CHLORIDE ON DOUGH RHEOLOGY AND BREAD QUALITY

(STEF92 Technology, 2021-12-20, Andreea Voinea, Silviu-Gabriel Stroe, Sorina Ropciuc, Georgiana Gabriela Codină)

Bread is a staple food all over the world and is the main source of sodium in the human diet which may increase the risks of diseases associated with a sodium-rich diet. Potassium chloride (KCl) is known as the most used ingredient for the food industry as sodium chloride replacer, with an intrinsic salty taste at low levels addition. The use of potassium chloride in the bread making process as a sodium chloride replacer may lead to bakery products of a very good quality from the technological point of view. The a...

EVALUATION OF PHYSICOCHEMICAL CHARACTERISTICS AND POLYPHENOLS CONTENT IN CHESTNUT HONEY SAMPLES

(STEF92 Technology, 2018-06-20, Sorina Ropciuc)

The aim of the research is to characterize chestnut honey by using physicochemical methods to achieve a specific profile. Determination of polyphenols content gives indications of the antioxidant properties of chestnut honey. Changes in quality parameters have been studied regarding acidity, pH, viscosity, dry matter and anthocyanin content. The obtained results indicate variations in the pH of honey samples between 4.9-6.7, the acidity of honey samples varied from 0.21 to 0.41. The honey viscosity was determined ...

BIOGENIC AMINES OCCURRENCE INTO WINES AND BEERS FROM THE ROMANIA MARKET

(STEF92 Technology, 2017-11-20, Mircea Oroian, Ana Leahu, Sorina Ropciuc)

The aim of this study was to evaluate the level of nine biogenic amines (putrescine (PUT), cadaverine (CAD), tyramine (TYR), tryptamine (TRY), 2-phenethylamine (2-PHE), histamine (HIS), spermidine (SPD), spermine (SPM) and agmatine (AGM)) into wines and beers from the local market of Romania. Their concentration in beer is of great interest not only for their potential risk to human health but also because they could have a role as chemical indicators of unwanted microbial contamination or deficient processing con...

Grape seed flour (GSF) is a viable ingredient used in bread-making to improve its nutritional value. Wheat flour bread is the most consumed bread, mainly produced from white flour which has a reduced nutritional value. In this study GSF from white wine pomace, at different particle sizes was used in wheat flour type 550 at levels from 3% to 9%. This type of wheat flour was of a strong one for bread making with a low deformation index which presented a low alpha amylase activity due to its falling number index valu...
